Watermelon with Lemon & Ginger Twist

 

Ingredients

3 cups of watermelon
5 tsp Sugar
1/2 cup Water
1/2 inch Ginger
2 Lemon( approximately 1/4 cup)
  1. Remove seeds and cut Watermelon to small cubes and blend it.
  2. Add water,sugar, grated ginger and blend it again.
  3. Add lemon juice and strain it.
  4. Refreshing on a hot summer day.

Badusha / Badushahi

 

 

Ingredients

3 cups Maida
1/2 cup Ghee
1/4 cup Oil
3 tsp Curd
3 pinches Cooking Soda
1/4 cup Water
Oil for deep fry
For Sugar Syrup
2 Cup Sugar
Water to immerse Sugar
2 pinches Elaichi/Cardamom powder
  1. In a bowl, add Maida, Ghee, Curd to it and mix it well.
  2. Add Water little by little(I added only 5-6 spoons),mix it well and make the dough like a chapati dough.Now add oil and keep it aside for 20 mins.
  3. After 20 mins make Sugar Syrup : Put Sugar in a pan add water to immerse Sugar and boil it.
  4. When bubbles appear ,take a little quantity in a spoon and pour it in a small bowl of water.It should form a thread in water.Then remove the pan from stove.Add cardamom powder and mix it well.Heat Oil for deep fry. Check for temperature  : when you place a tiny ball of dough in oil, it raises to surface immediately.
  5. Mean while start making Badusha shapes : Take a lemon sized ball of dough ,flatten it to 1/2 inch first and then flatten the edges more thin as shown in the picture.Now with 2 fingers take small piece from the edge and fold it inwards.Repeat it all around the circle.

  6. Fry Badusha : Now add 3-4 badushas slowly in oil.When the bottom turns golden brown colour (with in 5 mins)turn it to the other side and fry till the whole badushas turn to golden brown. Then take those out and place it on a paper for a min.
  7. Now immerse these badushas in sugar syrup for 3-4 mins and take out.
  8. Enjoy!!!!!

Eggless Vanilla ChocoChip Muffins


Ingredients

1 1/2 cup Cake flour / Maida
1 cup Sugar
1/2 cup Oil
3/4 cup Water
1/2 cup yogurt
1 tsp Baking Powder
1/2 tsp Baking Soda
1 tsp Vanilla Essence
1/2 cup ChocoChips
  1. Take a bowl add flour, sugar and oil to it.Mix it well.
  2. Add water little by little and mix it throughly.Pre heat oven to 180 degrees.
  3. Add vanilla essence, baking powder, baking soda to the bowl. Mix it well,keep it aside for about 10 mins.Arrange paper bowls in muffin tray.
  4. When you see small bubbles in the bowl, then add chocochips and mix it gently.
  5. Use a big spoon to pour this into paper cups.Fill till 3/4 of the cup. Leave some space to rise.Keep the tray in oven.
  6. After 18 -20 mins,check if it is done. Check : Put a fork or a tooth pick in the muffin till the bottom ,it should come out clean.If it is still not done, leave it for 5 more mins.Check every minute.For me it took 23 mins.
  7. Remove from oven and let it cool. 

Brocolli Rice

 


Ingredients

1 Cup Brocolli
1 Onion 
2 Cups Rice
3 1/2 Cups Water
1 Cup Green Peas
1 1/2 tsp Salt
2 tsp oil
2 Cinnamon Sticks
2 Cloves
2 Bay Leaves
1/2 tsp Ginger Paste
2 Green Chilli
  1. Wash Rice , add 1 tsp oil to it mix well, and leave it for 10 mins.Cut Brocolli and Onion.Slit Green Chilli.
  2. Heat oil in a low bottom pan. Add Bay Leaves, Cloves, Cinnamom Sticks to oil. Fry for 2 mins.Add Onion, fry for 3 mins then add Brocolli fry for 10 mins.
  3. Add Green Chillies,Salt and Ginger Paste and fry for 2 mins.Now add Peas mix well and let get cooked for 5 mins.
  4. Add Rice and Water.Mix Well and Keep the lid.
  5. Brocolli Rice will be ready in 15-20 mins.
