Eggless Chocolate Muffins

 

Everyone likes chocolates and if it is chocolate muffin we just can't stop eating one. My kids like taking these to school in their snack boxes.  

 

Ingredients

1 1/4 cup of Cake flour
1 Cup Sugar
1/2 Cup Condensed Milk
1 Cup Water
1/2 Cup Oil
1 teaspoon Baking Powder
1 teaspoon Baking Soda
3 teaspoon Coco Powder
  1. Add Cake flour , Sugar and Oil to a bowl . Mix these well.
  2. Add Condensed Milk and Water . Mix again. There shouldn't be any lumps. Then add Baking Powder, Baking Soda and Coco Powder.
  3. Mix and leave it for 15 mins. Meanwhile pre heat the oven at 180 degrees . Make the Baking tray ready with Baking cups. You can see bubbles in the bowl.
  4. Now pour the mixture in baking cups 2 -3 tablespoons in each cup depending the size of it ( Fill 2/3 of the cup ). Add some decorations at this stage and place it in the oven.
  5. Muffins will raise after 15 -18 mins. Place a fork or a tooth pick in the muffin, if it comes out clear, muffins are done. If not, leave it for 5 more mins and check every min. Take the tray out and let it cool.
  6. My kids are asking me to make these almost every week. :)

Sweet Potato Sweet

 


Sweet Potato Halwa is my favorite but I am trying to make few sweets without milk and this is one of those. Easy to make and crunchy too. 

Ingredients

3 -4 medium size Sweet Potato
1 cup Sugar
1/4 tsp Elaichi Powder
15 Cashew nuts
15 Almonds
3 tsp Ghee
  1. Clean Sweet Potato. Cut the ends and cut them to small cubes. No need to remove skin. Immerse in water and boil.
  2. When Sweet Potato becomes soft, drain out water completely. Add Sugar, 1 cup of water, Elaichi Powder and cook it till Sugar dissolves and water completely evaporates.
  3. Heat Ghee in a small pan. Add Cashew nuts and Almonds. Fry them till they turn light brown. Remove from Stove and grind half Cashew nuts and Almonds to a coarse powder.
  4. Add this Powder to Sweet Potato and mix it well. Add the remaining Cashews and Almonds.
  5. Very Easy and Tasty Recipe.

Brinjal Raw Tamarind Stew / Vankaya Pachi Pulusu

 

You ask anybody from Andhra what their favorite curry is ? Most of them will immediately say Brinjal Curry. Thats why there are many varietes made with Brinjal in Andhra. The list never ends. But I never used to like it :) . This was first recipe I learnt from my would be - hubby.

 

Ingredients

2 Big Brinjal
2 Onions
1/2 cup Tamarind Pulp
1 cup Water
1 tsp Salt
1/2 tsp Turmeric Powder
3 tsp Sugar
1 tsp Red Chilli Powder
2 tsp Oil

Tempering

1 tsp Bengal Gram / Channa Dal
1 tsp Black Gram / Urad Dal
1/2 tsp Mustard / Sarson
1/2 tsp Cumin Seeds / Jeera
3 tsp Oil
2 Green Chillies
10 Curry Leaves
  1. Make deep cuts in Brinjal lengthwise as shown in the picture. Keep forks in them.
  2. Apply Oil all over these Brinjal. Place them directly on stove and roast them till Brinjal becomes very soft. Roast it all over by turning brinjal.
  3. Allow it to cool. Remove the skin and crown and then mash it.
  4. Heat Oil in a pan. Add all the items in Tempering. When the Dals turn brown add cut Onions.
  5. Add mashed Brinjal to this when Onion turns light brown. Add Turmeric, Salt, Sugar and Red Chilli Powder and mix it well. Fry it for 5 mins. 
  6. Now add Tamarind Pulp and add Water and let it boil for 10 mins.(No need to boil this.But I prefer it this way.)
  7. This is a Traditional Andhra Recipe. It goes well with Rice or pulagam. Vadiyalu specially Gummadi Vadiyalu can be added to this.

Sweet Butter Biscuits

 

This was my experiment with the Oven in my kitchen. I was not very confident of baking,  but when this came out really delicious my confidence boosted up and I am baking a lot these days. Will post all my recipes soon.

Ingredients

2 cups All Purpose flour / Maida
1 cup Sugar
1 cup Butter / Ghee
  1. Add Sugar and Ghee to Maida. Mix it well. Leave it for 15 mins.
  2. Mean while heat the oven at 180 degrees. Grease the tray.
  3. Make small lemon sized balls of maida. Now press each maida ball like biscuits(5mm thickness) and place them on tray.
  4. Keep the tray in Oven and bake it till the bottom of the biscuit turns brown (take approximately 18-20 mins).
  5. Take the tray out and allow it cool. Use a spatula to take out biscuits and store them. Keep some papers between each layer of biscuits. 
  6. My kids favorite. Tastes like EET-SUM-MOR biscuits.
