Pav Bhaji - India's Street Food

 


 
Pav Bhaji, one of the Mumbaikers favourite street food is my favorite too. It can be easily prepared. So, Sometimes I prefer to make this for Lunch or Dinner. Making my work easy.

Bhaji is rich of vegetables like Carrot, Potato and Green Bell peppers. So this is a healthy food too. Surpirisingly, even with so many vegetables in this, this is one of kids favourite recipe.

Pav Bhaji is a nice idea for parties and get togethers.  . Bhaji with 2-3 Pav is stomach filling.No need to make many items.


Ingredients 

For Bhaji / Curry (For 12 Pavs)
3 Carrots
2 Big Potatoes
2 Tomatoes
1 Onion
1 Capsicum/ Green Bell Pepeer
1 Big Floret Cauliflower
1 Cup Green Peas
1 teaspoon Red Chilli Powder
1 teaspoon Pav Bhaji Masala
1 teaspoon Masala Powder
1/2 teaspoon Tumeric Powder
1 teaspoon Salt
2 tablespoons Tomato Ketchup
2 tablespoons Oil
1/2 - 1 cup Water

For Pav

12 Pav / White Bun
2 tablespoons Ghee / Butter

  1. Cut Potato, Carrot into inch size cubes. Cut Caulifower to small florets. Pour water to immerse all these and pressure cook it along with Green Peas for 3 whistels or boil all these till they become soft.
  2. Cut Onion, Capsicum and tomato into small pieces. Heat a heavy bottomed pan, add Oil. When Oil is hot, add cut Onions and saute them till traslucent. Add Ginger Paste and saute again till the raw ginger smell goes off. Then add Capsicum and saute for 2 minutes and then add Tomato. Saute for 5 more minutes.
  3. Now add all the powders,Tomato Ketchup,Salt and Water. Quantity of Water to be added depends on the consistency you want. (1/2 - 1 Cup. I  added only 1/2 Cup of Water). Mix and let it cook for 5 mins. 
  4. Remove water from boiled / pressure cooked vegetables and mash them. Add these mashed vegetables to the pan, mix it and let it cook all these together for 10 more minutes. You can add 1 tablespoon of Sugar to this but it is optional. Bhaji is ready.
  5. Now for Pav, Cut Pav into 2 halves. Heat a flat pan, pour 1/2 tablespoon of Ghee, place Pav on it for a minute turn it upside down, remove from the pan after a minute. You can do this step just before serving.
  6. Serve it with small cut Onions, Coriander and Lemon pieces. Squeze lemon into Bhaji just before eating. Enjoy Mumbai's street food anytime at home.

Spicy Maida Biscuits / Spicy Maida Stripes

 

Got bored with Diamond Cuts. So I tried this new recipe today by adding Besan / Chickpea Flour and and Chilli Flakes to Maida / All Purpose Flour. My Family liked it. Chilli Flakes gives extra taste to it. I made stripes instead of Diamond Cuts. Try this Crunchy Spicy Snack.





Ingredients

1 Cup Maida / All Purpose Flour
1 Cup Besan / Chickpea Flour
2 teaspoon Sooji
1 1/2 teaspoon Salt
1 teaspoon Red Chilli Flakes
2 teaspoon Jeera / Cumin Seeds
2 teaspoon Oil
Approx. 1/2 Cup Water
Oil for deep fry

  1. In a bowl, add Maida and Besan. Add Jeera , Chilli Flakes , Salt and Oil. Mix all these well.
  2. Now add Water slowly and make tight dough. Divide the dough into 4 parts and shape them like balls.
  3. Press the dough ball down, dust it with Besan and flatten it thin like a oval or square with a roller pin. Dust it everytime you press so that it doesn't stick to the roller. Then cut stripes at 1/2 inch thickness.
  4. Heat Oil for deep fry. When the Oil is hot enough, place 10 stripes in Oil one after the other. Fry these till they turn brown. Remove these onto an absorbant paper.
  5. Spicy, Crunchy Snack for timepass or tea-time.

Bobbattlu / Obbattlu / Puran Poli / Holige

 

During festival season we make lot of sweet varieties. This Bengal Gram Dal stuffed flat bread (Bobbattu / Obbattu / Puran Poli / Holige ) is a popular traditional sweet in Andhra Pradesh / Tamilnadu / Karnataka / Maharastra and Gujarat. 

Made these for the first friday of Sravana masam. 
Tastes so good with Ghee spreaded on it.




Ingredients (Makes 12 -15)

For Purnam / Stuffing 
1 cup BengalGram Dal / Channa Dal
1 cup + 2 teaspoon Sugar
2 cups of Water
Pinch of Cardamom Powder 

For Outer Layer
1 3/4 cup All Purpose Flour / Maida
Approx. 3/4 cup Water
2-3 pinches of Salt
1/4 cup Oil

Clarified Butter / Ghee

  1. In a large bowl, mix Maida, Salt and Water. Make it as a tight dough. Press it down and pour 1/4 cup of Oil in it. Leave it for 1 hour.
  2. Clean Channa Dal add 2 cups of Water and cook it in a pressure cooker for 3 whistles.You can also boil Channa Dal in water till it becomes soft. Remove if there is any excess Water. Add Sugar and Cardamom Powder to cooked Channa Dal when it is hot and mix it. Leave it for 1/2 hour.
  3. Grind Channa Dal mixture to a smooth paste. Heat a heavy bottomed pan. Pour this mixture in it. Cook it till the paste leaves walls of the pan. Stir it regularly so that it doesn't get burnt at the bottom. Keep it aside and let it cool. 
  4. Now remove excess Oil from Maida in to a small cup and slowly add it to Maida again a tablespoon at a time. knead it well so that the dough slips from your hand.Divide Channa Dal paste and Maida dough into equal portions and shape them like balls.
  5. Grease your hands with Oil. On a plastic sheet or banana leaf flatten each Maida ball into a circle. Make it more thin near the ends.  Place Channa Dal ball on it and fold it from all sides. Turn it upside down. Press it down and flatten to a thin circle.
  6. Heat a flat pan on low (flame / mark). Gently remove Bobbattu from plastic sheet and place it on pan. Pour a 1/2 teaspoon of Oil around it and on it. Let it cook for 2 mins and turn it upside down and cook it for 2 more mins or till you see brown spots on it. Store in an air tight container and keep it refrigerator. Its tastes good for 2 days.
  7. Celebrate your festive season with Bobbattu.
