Radish Sambar / Mullangi Sambar

 


Sambar is a must have recipe for many South Indian People. Sambar is made with many different vegetables and flavour is different with each vegetable,.You can mix it with rice or as a side dish for Idly and Dosa. 

Radish purifies blood and is an effective cancer fighting vegetable. I started eating radish only after listening to the benefits of it.  Include it in your meals as much as you can. 




Ingredients

1 Long White Radish / 6 Red Radish
1 Onion
1 teaspoon Cumins Seeds / Jeera
1/2 teaspoon Mustard
1/4 teaspoon Turmeric Powder
1 1/2 teaspoon Sambar Powder
2 Red Chilies
1 teaspoon Salt
1 1/2 teaspoon Concentrated Tamarind Pulp / 1/2 cup Tamarind Pulp
1 cup Split Red Gram / Tuar dal
3 cups of Water
2 teaspoon Oil

  1. Pressure cook 1 cup tuar dal with 2 cups of water for 3 whistles and mash it.
  2. Slice radish to thin circles and cut onion to thin slices. Heat oil in a pan, add jeera and mustard . When jeera splutters, add onion , sauté till onion turns translucent.Add radish and cook for 3 mins.
  3. Add turmeric powder, sambar powder and red chilli powder , sauté again a for 3 mins.Add tamarind pulp and a cup of water.When water comes to boil, add mashed tuar dal to it. Cook for 5 mins.
  4. Temper it with Jeera and Curry leaves.

Butter Cup Corn - Sweet Corn Recipes

 

 Aroma of this fills almost all malls in India and attracts people of any age. This quick and easy snack is our favorite snack especially in winter season. 




Ingredients

2 cups Frozen Sweet Corn Kernels
1 tablespoon Butter
1/4 teaspoon Salt
1/2 teaspoon Pepper

  1. Place corn kernels in microwave for 2-3 minutes. If you don't have frozen corn , you can cook corn for 2-3 whistles in a pressure cooker or in microwave for 8-10 minutes. Remove excess water if there is any. Add butter, salt and pepper. 1/2 tsp Salt can be added if unsalted butter is used. Mix it well.
  2. Squeeze lemon and Serve it hot.

Eggless Moist Red Velvet Cake with Vanilla Cream Frosting

 

Moist Red Velvet Cake that too eggless...I made it ..wow..."Surprise" I showed this to my family . My kids said "u r the best mom". "Ummm!!!!  looking good and tasting good. We have a bakery at home" my husband said.

Today is my blog's first anniversary so thought of making something special. My daughter asked me to make this. Couldn't say NO to her but I only had the recipe with egg. But I wanted a eggless cake. Wasn't quite sure about the recipe but made few changes the result is a perfect moist, silky, velvety, smooth ,tasty eggless Red Velvet Cake.

Dry Ingredients
2 cups Cake Flour 
1 teaspoon Baking Powder
1 teaspoon Baking Soda
1 teaspoon Salt
1 teaspoon Cocoa Powder

Wet Ingredients
1 cup Sugar
3/4 cup Yogurt
3/4 cup Vegetable Oil
1 cup Hot Water
2 teaspoons Vanilla Essence
9 teaspoons Red Food Colour

  1. In a bowl, whisk cake flour, baking soda, baking powder,salt and cocoa powder. In a blender, blend sugar, yogurt and oil. 
  2. Add hot water to the blender and blend for few seconds. Pour these wet ingredients into the dry ingredients bowl.  Mix and whisk the ingredients well for 5 minutes to make a fluffy, smooth paste. 
  3. Pre heat oven at 180 degrees. Add vanilla essence and red food colour to the bowl.  Mix it well. Grease the pan with a tablespoon of butter and pour the cake mix in it.
  4. After 25-30 minutes, check the texture and run a tooth pick through the cake till the bottom of it. If the cake is done, tooth pick comes out clean. Otherwise keep the pan in the oven for 5 more minutes and check again. Take the pan out of the oven and place it on a rack to cool. Then pass a knife through the edges to easily take the cake out. Turn it upside down and frost it with vanilla cream frosting. 
  5. Serve it chill. 

Vanilla Cream Frosting for Red Velvet Cake

 

Vanilla cream Frosting is a simple and quick frosting to decorate your cakes and cup cakes. Vanilla brings that extra flavour and makes cakes super delicious. 

Vanilla cream frosting goes very well with Red Velvet Cake. I have used heavy cream here which stands firm than the regular cream.

Ingredients 

1 cup Heavy Cream
1 1/2 tablespoon Sugar
1/2 teaspoon Vanilla Essence 
  1. To make vanilla cream frosting, whisk heavy cream, sugar and vanilla essence for 5 minutes until it gets fluffy and firm. Now frost the cake with cream with a knife or back of a spoon. Decorate it as you wish.

    Tomato Rice - South Indian Recipe


     

    Tomato Rice a delicious, easy to make South Indian rice item is good idea for lunch box. Serve it with potato chips and raita. I make this quite often.



    Ingredients

    2 Tomatoes
    1 Onion
    1 1/2 cup Basmati Rice
    3 cups Water
    1 teaspoon Salt
    1 teaspoon Red Chilli Powder
    1 teaspoon Coriander Powder
    1/2 teaspoon Masala Powder
    1/4 teaspoon Turmeric Powder
    3 teaspoon Oil

    To Temper
    1 teaspoon Bengal Gram / Channa Dal
    1 teaspoon Black Gram Dal / Urad Dal
    1/2 teaspoon Cumin Seeds
    1/2 teaspoon Mustard
    3 teaspoon Peanuts
    3 Green Chillies
    1 rind Curry Leaves
    1 teaspoon Ginger 

    1. Wash and soak rice for 10 minutes. Slit green chillies and chop onion, tomatoes and ginger (You can add 1 teaspoon ginger paste or ginger garlic paste).
    2. Heat a heavy bottomed pan, add oil. When oil is hot add cumin seeds and mustard. Add bengal gram, black gram and peanuts after the mustard and cumin seeds splutters.  When the lentils turn light brown add green chillies, ginger and curry leaves. Saute for 2 minutes. Then add onion. Saute till onion turns light brown.  
    3. Add all powders and then tomato. Saute for 5 minutes or till half of it becomes like puree. Add water and let it boil. 
    4. Drain water from the soaked rice and add this. Let it cook till all water evaporates. It takes 25-30 minutes.
    5. Quick and Tasty !!!!
